Ingredients
  • Spinach Pancakes

Instructions
  1. Add the eggs, milk and spinach to a blender and blend until completely smooth.
  2. Add the flour, salt and olive oil, then blend again until you have a smooth, pourable batter. Let it rest for 5 minutes.
  3. Lightly grease a non-stick frying pan and heat over medium heat.
  4. Pour a thin layer of batter into the pan, swirling it immediately to coat the base, just like making crêpes.
  5. Cook for about 1½–2 minutes, then flip and cook for another minute. Repeat until you have 4 thin spinach pancakes.
  6. Divide the pancakes between two plates, placing 2 pancakes on each plate.
  7. Spread the hummus over the pancakes, then top with lettuce, smoked salmon, avocado and cherry tomatoes.
