Instructions

Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking tray with baking paper.
  2. Cut the eggplants in half lengthwise. Using a knife, make shallow crisscross cuts in the flesh, being careful not to cut through the skin.
  3. Brush the cut side with 1 tablespoon of olive oil and place the eggplants cut-side up on the baking tray.
